Sharing Lockdown Day 32

From grubbing the driveway and planting Tussocks we are now busy dealing with firewood. Philip is making use of his Christmas present which was safely gear to wear while chain sawing and although it took us quite some time and a few hilarious moments we finally inserted the attachment inside the helmet – these have to be the worst written instructions ever. We have had 7 large pine trees felled and we are cutting up the small branches. I can see the next item on the ‘want’ list will be a bigger chainsaw!

I made a very old and favourite mushroom soup for lunch . The recipe comes from the Moosewood Cook book. I used recipes from the two Moosewood books a lot in my ‘Partners ‘ days and I can remember Matthew as a little boy in his high chair ploughing his way through bowls of this soup.

Hungarian Mushroom Soup

350 grams fresh mushrooms – sliced, 2 onions – finely diced, 2 tablespoons olive oil, 2 cups chicken stock, 1 tablespoon soy sauce, 1 tablespoon paprika, 1 teaspoon salt, 2 tablespoon butter, 2 tablespoons flour, 1cup milk, 2 tablespoons sour cream, juice of half lemon, 4 tablespoons chopped fresh parsley

Sauté the onion in olive oil. Add the sliced mushrooms and cook for 5-6 minutes until starting to soften. Add stock, soy sauce, paprika and salt. Cover and simmer for 15 minutes, Melt butter in a saucepan, whisk in the flour and cook the roux until bubbly. Add the milk and stir until thickened. Ladle in a little of the mushroom stock and stir until combined. Pour the milky sauce into the mushroom mixture. Cover and simmer for 10 minutes. Just before serving taste and season, add lemon juice, sour cream and parsley.

Left overs were up on the plate for dinner and the trusty chicken and kumara pie almost tasted better the next day . I bought a celeriac at the supermarket during the week – so boiled it with equal quantities of potatoes to make a delicious mash. Topped with good old panfried cabbage it was a comfort food dinner.

  1. Partners used to serve up the Hungarian Mushroom Soup with regularity. A good reminder to get the Moosewood out.
