After attending an inspiring 3 days at the Otago Polytechnics Food Design Conference several weeks ago – I have been inspired and fizzing about ‘Food Stories’ and the creation of dining themes. The Conference dinner was the best night out I have had in a long time – so much fun and they had it right – ‘Expect the unexpected’
One of my favourite classes was with two gorgeous sisters from Mexico – Their enthusiasm for the staple ground corn called Maize was infectious. In a class of 20 we made piles of traditional tortillas to take home – plus create a base to serve Muttonbird on for the dinner in the evening to be served on unique plates made to show off Titi feathers .
